We were craving something fresh with protein, veggies, carbs, healthy fats and lots of flavor and whipped this up!
too good and too easy to not share with ya! Here’s what we did:

3 cooked chicken breasts diced

8oz of pasta

1 red bell pepper
-
1 yellow bell pepper
-
1 cup of cherry tomatoes
-
1 cup of mozzarella
-
Italian dressing to taste
-
Pinch of fresh or dried basil
-
handful of arugula
directions:
-
boil 8oz of chosen pasta (we did Fusilli) and set aside to cool
-
cook chicken and dice once cooled
-
chop veggies
-
mix together all ingredients
-
serve over bed of arugula
